Emotions add a whole other level. Emotions are locked in beliefs in our subconscious mind that dictate how we act. Our subconscious mind controls them much like it controls our heart beat or our breathing. They just automatically happen without us thinking about them. Most beliefs were created before the age of 9 years old and over the years they have become engrained in us as our own truth.
An Example of this is: Say someone has a belief that "they are not big enough" or "If I'm big then no one will bother me". Then no matter how good they are at controlling their eating habits, they will still hang on to the weight.
This makes it so that even if we can change our habit, our beliefs make a loop hole in the process bringing us right back to doing the habit we wanted to change or keeping us right where we are.
